Cinnamon Apple Muffins

We call have to splurge a little sometimes right? Whether it be that new pair of shoes at the mall or that new surround sound system you've been eyeing for months. The same thing goes in the kitchen. For the most part I have been eating a healthier data when compared to my college days.

Then came these...


Cinnamon Apple Muffins


1 Fuji Apple – peeled and diced
1 ½ cups AP Flour
1 ¼ Teaspoon Baking Powder
¼ Teaspoon Salt
1 Stick Unsalted Butter - melted
1 cup Dark Brown Sugar
2 Tablespoons Cinnamon
2 Large Eggs - beaten
2 Teaspoon Vanilla Extract
2/3 cup Whole Milk

¼ cup Margarine – softened.
1 ½ cup Powdered Sugar
¼ cup Cream Cheese
½ Teaspoon Vanilla
¼ cup Whole Milk
Pinch Salt


1.     Preheat oven to 375.
2.     Line a muffin pan with muffin cups
3.     In a large bowl, combine the AP flour, baking powder and salt.
4.     In a medium bowl, whisk the apple, butter, brown sugar, cinnamon, eggs, vanilla, and milk.
5.     Gently pour the wet mix into the dry mix while stirring.
6.     Once everything is incorporated, pour the batter into the muffin cups.
7.     Bake for about 15 minutes.
8.     Combine the icing ingredients until smooth.
9.     Once the muffins are dry, spread the icing onto the muffins. Enjoy!

P.s. I didn't wait for the cupcakes to completely cool before I spread the icing. Impatience at its finest.
