Baked Tilapia w/ Chipotle Butter

Every now and then I think to myself, “Maybe I should post something that doesn’t bust the gut?” The key phrase is every now and then. I have a high metabolism and remain active so I’m not much of a calorie counter. However, I do realize the importance of not piling on those unhealthy indulgences.

I am beginning to explore healthy ideas for dinner. That led to a healthy-ish fish recipe. Baked instead of fried, no breading, but, yes, there is chipotle butter. Baby steps folks…baby steps.

This is a small twist on a fish recipe I posted earlier in the blog. I enjoy this one even more!

Baked Tilapia w/ Chipotle Butter


Ingredients (Per Fillet)

1 Tilapia Fillet
1 teaspoon Seasoned Pepper
1 teaspoon Seasoned Salt
½ teaspoon Parsley

¼ teaspoon Lemon Juice
1/8 cup Butter
1 Tablespoon Chipotle Seasoning
1 Clove of Garlic

Directions

1.     Season the Tilapia with Seasoned Pepper and Seasoned Salt.
2.     Preheat your oven to 425 degrees.
3.     In a small saucepan, melt the butter over low heat.
4.     Add the Garlic and sauté for 4 minutes.
5.     Add the Chipotle Seasoning and sauté everything for 3 minutes.
6.     Add the lemon juice, incorporate, and turn off the heat.
7.     Spray a baking sheet and place the fish in the pan.
8.     Pour the chipotle butter over the fish.
9.     Sprinkle the fish with parsley and place the baking pan in the oven.
10. Bake for 15 minutes.
11. Serve
