Cheeseburger & Fries Quesadilla

Cheeseburger and Fries. A classic combination.

Quesadillas. Not a TRUE classic (at least not in the U.S). But still very delicious.

So what happens when you combine the two!? Greatness. That's what happens. And when it's this easy to make. You can't go wrong!

It's a quesadilla stuffed with mexican cheese, ground beef, green peppers, green onions, french fries, blue cheese and a homemade buffalo sauce to give it a little kick. This sauce is very versatile and I used it in the Buffalo Wing recipe, which I posted a couple of weeks ago.

Cheeseburger & Fries Quesadilla

Ground Beef Mix
1- 1.5 lb Ground Beef
1/4 cup Green Bell Pepper – chopped
2 tablespoons Green Onion (Scallions) - chopped
1 tablespoon Seasoned Salt
1 tablespoon Seasoned Pepper
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 tablespoon Worcestershire Sauce
2 tablespoons Olive Oil

Buffalo Sauce
1/8 cup Sweet Chili Sauce
2 tablespoons Soy Sauce

1 cup Frank’s Red Hot Sauce
1/8 cup Butter
¼ cup Sriracha Sauce

 Per Quesadilla
1 cup Mexican Cheese
2 tablespoons Blue Cheese
1/4 cup French Fries (Cooked, chopped into 1 inch pieces)
2 tablespoons Olive Oil
1 large Tortilla
1/2 cup Buffalo Sauce (recipe above)


1.     Combine the buffalo sauce ingredients in a pan and heat over low heat for 10 minutes. Set aside uncovered.
2.     Heat a medium sized skillet over medium heat.
3.     Add 2 tablespoons olive oil.
4.     Add the green pepper and sauté for about 5 minutes.
5.     Add the ground beef and green onion along with the seasoned salt, seasoned pepper, garlic powder, onion powder and Worcestershire sauce.
6.     Saute everything for about 15 minutes until slight pink remains.
7.     Cut off the flame, drain the grease from the pan and set aside.
8.     Cook the fries according to package instructions and set aside.
9.     Meanwhile, rub the final 2 tablespoon of olive oil on one side of the tortilla.
10. Flip the tortilla and on one half of the tortilla, add half of the Mexican cheese, 1/2 cup of the ground beef mix, blue cheese, french fries, buffalo sauce and the remaining cheese. In that order.
11. Fold the tortilla in half over the mix and place on the griddle for 7-8 minutes. (Make sure to lightly press down on the edges of the tortilla before placing it on the griddle).
12. Flip the tortilla add cook for additional 7 minutes, until the cheese is melted and oozing out of the sides.

13. Cut as you wish and enjoy!
