Spicy Sausage and Tortellini Soup

Yup...this put me to sleep

I should apologize for the delay in posting recently. I've just started grad school and have had some technical difficulties with the blog. BUT that's not what this post is about (obviously).

Nothing like a good bowl of soup right? Especially when it's fully loaded! Soup is more than a bowl of chicken broth. In a way, you can take a bunch of food items you love, toss em in a pot with herbs and spices...and...BOOM. SOUP. Kind of.



So here's my latest creation. Spicy Sausage and Tortellini Soup. Pretty simple to make. I did it while watching Breaking Bad AND during one of my fantasy football drafts...so you know it can't be that hard! Enjoy.





Spicy Sausage and Tortellini Soup

Ingredients

2 links Andouille Sausage
1 cup Tortellini Pasta
6 Ripe Tomatoes – diced
1 small Yellow Onion – diced
¼ cup Carrots - sliced
2 Garlic Cloves - minced
1 6 oz can Tomato Paste
1 Tablespoon Oregano
1 Tablespoon Basil
½ Tablespoon Parsley
1 Teaspoon Rosemary
2 Tablespoons Salt
2 Tablespoons Black Pepper
2 tablespoons Olive Oil
3/4 cup Chicken Broth
Parmesan Cheese To Taste

Directions

1.     Pour 1 tablespoon of olive oil in a small skillet and heat over medium heat.
2.     Cut the sausage links into bite sized slices and place on the heated skillet.
3.     Cook for about 10-12 minutes per side. Take the sausage out of the pan and set aside in a bowl.
4.     In the same pan, add the remaining tablespoon of olive oil over medium heat.
5.     Add the carrots and onion and sauté for 5 minutes.
6.     Add the garlic and continue to sauté for another 7 minutes.
7.     In a food processor, add the tomatoes and puree until mostly smooth (it is ok to have some small tomato chunks).
8.     Add the pureed tomatoes to a large pot.
9.     Add the tomato paste and chicken broth into the pot and turn the heat on low.
10. After 5 minutes, stir and add the onion, carrot and garlic mix.
11. Increase the heat to medium-low and add the oregano, basil, parsley, rosemary, salt and pepper.
12. Stir to combine and cover. Cook for 45 minutes, stirring occasionally. 
13. While this is cooking, cook the pasta according to box instructions.
14. Drain the pasta and set aside.
15. After the 45 minutes, add the sausage.
16. Cook for another 10 minutes (covered).
17. Add the pasta and stir to combine.

18. Sprinkle with parmesan cheese.
