Salmon Croquettes

If you don't know you better ASK SOMEBODY...like me.


Here's something simple and inexpensive. Good combination right?? Not to mention its delicious. My mom used to make these all the time growing up. They may not be healthy...but um...I don't have a response. 






Salmon Croquettes


Ingredients

15 ounces Canned Salmon
2 teaspoons Ground Pepper
1 ½  teaspoons Kosher Salt
1 tablespoon Brown Sugar
1 teaspoon Red Pepper Flakes
2 teaspoons Dry Mustard
1 Potato
1 Egg
Vegetable Oil for frying
½ cup tablespoon Flour, 1/2 teaspoon Flour


Directions

1.    Peel the potato and cut into half inch chunks.
2.    Boil until soft (about 15 minutes).
3.    Drain the water and let potatoes cool.
4.    Dice the potatoes into very small pieces and set aside.
5.    Lightly beat one egg in a medium-sized bowl.
6.    Add in salmon, ground pepper, salt, brown sugar, red pepper flakes, dry mustard, diced potatoes, and flour.
7.    Cover your hands with about a half teaspoon of flour and shape the mixture into 6 patties.
8.    Heat about 1 inch of oil in a large frying pan over medium heat for 15 minutes.
9.    Fry the patties until golden brown on both sides (about 10 minutes per side).
10.   Place on paper towel to dry.
**I eat these with hot sauce and ketchup, but that's a personal prefference.
