I scream! You scream! For......Grilled Cheese Crab Cake Sandwich?

Grilled Cheese and…Crab Cake?


Ingredients (makes two large crab cakes)

Crab Cake
½ lb lump crab meat
1 small egg
1 ½  tablespoon mayo
1 tablespoon lemon juice
¾  cup panko bread crumb
1 teaspoon Sriracha
½ teaspoon salt
2 tablespoons butter
1 tablespoon olive oil


Grilled Cheese
4 slices cheddar cheese
4 slices wheat bread
sandwich garnish (optional – lettuce, tomato)
tarter sauce (optional)

Directions

1.    Combine crab meat in medium sized bowl with the egg, mayo, lemon juice, Sriracha, salt, and panko bread crumbs
2.    Mold the mix into two patties(roughly the size of a slice of bread)
                    ** When molding the patties, lightly squeeze to help the mold come together
3.    Place on a baking sheet and wrap with clear wrap and refrigerate for an hour
4.    Place oil and butter on a skillet over medium-low heat
5.    Once hot, cook the patties for 7 minutes per side
6.    While these are cooking, heat another greased skillet for the bread
7.    Butter both slices of bread and place butter side down on the heated skillet for 6-7 minutes

8.    After flipping the bread, place sliced cheese on top and cook until cheese has melted and bread is golden brown
9. Build the sandwich by placing one crab cake, topped with a tomato and optional tarter sauce in between the slices of bread.
