Fried Mac N Cheese Bites

What's better then delicious leftovers??..

How about delicious leftovers that turn into something incredible! Every now and then, I'm going to post a recipe that uses leftovers and puts an interesting twist on an old favorite. This time I used my homemade mac n cheese recipe, which I posted earlier in my blog. (the link is below)

Fried Mac N Cheese Bites


Leftover Mac N' Cheese – refrigerated for at least 4 hours
½ cup Breadcrumbs
1 teaspoon Black Pepper
1 ½  teaspoons Chili Powder
1 teaspoon Salt
2 Eggs – beaten
1 tablespoon Milk
Vegetable oil for frying


1.    Scoop out 8 tablespoons of mac n cheese and mold into 8 balls.
2.    Lay the balls onto a baking sheet lined with aluminum foil.
3.    Freeze for at least 3 hours.
4.    Heat about ½ inch of vegetable oil in a frying pan over medium heat.
5.    Combine breadcrumbs with pepper, chili powder and salt in a bowl.
6.    In a separate bowl, combine the milk and beaten eggs.
7.    Dredge the balls, one at a time, in the egg mixture, and then in the breadcrumb mix. (Make sure the balls are completely covered)
8.    Fry each ball for about 4 minutes per side or until golden brown all around. After they're done frying, lay the bites to rest on a paper towel.

9.    Serve with your favorite marinara or tomato sauce.
